2-3 lb roast
1/2 cup balsamic vinegar
1/4 cup water
1/4 cup brown sugar (or agave, honey or maple syrup)
2 - 3 onions quartered
1 cup beef broth
1/2 cup chicken broth
3 cloves crushed garlic
3 bay leaves
Season roast generously with pepper and place in a lightly greased baking dish. In large bowl mix rest of ingredients except for onions.
Place onions in the bottom of the dish and place roast on top.
Pour liquid mixture on meat and lay bay leaves around it.
Take parchment paper, lay on top and twist ends at each corner to secure it on.
Cook 3 - 4 hours or till desired temperature is reached.
