Turkey Day Leftovers

Here is a stockpot that has the turkey carcass, onions, celery, carrots, thyme and parsley.  I also poured in the juices from the turkey then added in water to cover the bones well. Here's a bowl of soup we had made for tonight.  When the stock was done I poured everything through a sieve and just kept the broth.  I threw all the dark meat into the pot and some fresh chopped carrots.  In a separate pan I made some basmati rice.  I don't like making it in the soup pot because all the leftovers become mushy.  So what we did was put a spoon of rice in the bowl, a scoop of cooked sweet potato and some of the meat and carrots out of the soup pan.  I then drizzled the broth over the top.  We ended up seasoning only with salt afterwards.  This was lovely!  Just one of many leftover ideas.  I have more ideas posted below.  Have fun! Healthy Fall Recipes Made With Real Food

My sweet friends from my Health Nuts forum have been posting so many yummy looking recipes.  Here's some I want to give a try or have already tried and love.  Do you have any to share that doesn't contain wheat or sugar? Caramel Apples by Heidi of 101 Cookbooks Grain Free Pumpkin Cookies by Sarah, The Healthy Home Economist Roasted Pumpkin Salad by Heidi at 101 Cookbooks Pumpkin Pudding by Diane at The Whole Gang   I've actually tried this and it's so good!  I use maple syrup in place of agave. Rice Pudding - by me :) Spiced Cider by me Cream Cheese Stuffed Dates by me Maple Mashed Sweet Potatoes - I don't remember who I got this recipe from.   I will say these are hands down amazing! Maple Syrup Nuts Coconut Milk Hot Chocolate by My Year Without Sugar This is all I can find for now.  If I find more, I'll will most certainly add them.  Happy Eating!

Bean Soup and Gluten Free, Sugar Free Cornbread

Ham and Bean Soup Ingredients: water 2 - 48 ounce jars of canned beans 3 slices bacon, chopped in small pieces 2 ham steaks, chopped and bones kept 2 celery stalks chopped fine 3 carrots chopped fine 1 large onion chopped fine 1/2 teaspoon chili powder Directions: 1.  Empty beans into a large pot.   2. Place diced bacon and veggies in a skillet and saute till onions are just starting to get translucent. 3. Dump the veggies in the pot of beans and add in chili powder.  Also add in chopped ham steaks and bones. 4. Add water in - the amount is dependent on how much broth you want in your soup. 5. Bring to a boil and simmer for about an hour.  Serve or transfer to a crockpot and keep on low/warm till ready to serve.  Salt and pepper as needed. This will serve at least 10 people - maybe more. Simplifying Breakfast

Our life has taken a few turns along the way since my husband and I have gotten married.  We are constantly trying to cut out stressors and simplify what we can.  Today I'll be sharing a few recipes to simplify breakfast.  You can find many recipes similar to this that have bread in them.   However, I've been trying to go gluten free and these fit the bill better.   I have not made any of these yet but do plan on making 1-2 of these per week and then rotate them.  In our family, we eat high protein in the morning instead of lots of grains/fruits because our body works much better this way. Pancake Buffet

Yes you read right! I was trying to figure out what to serve our guests tomorrow and decided on a whole boneless ham with a pancake buffet. The sky is the limit. Some people like to offer mix-ins as well but I was trying to keep cost down and keep things simple. Here's what we are having. Toppings: homemade applesauce homemade buttered pecans powdered sugar cinnamon fresh whipped cream homemade blueberry sauce bananas Toasted Pecans Ingredients: 2 cups raw pecans 3-4 tablespoons melted butter up to 1/2 teaspoon sea salt Directions: l. Place nuts on a cookie sheet and drizzle with melted butter; then sprinkle with salt. 2. Roast in a 325 degree oven for 20 minutes, stirring every 10 minutes. 3. Drain over paper towels and let cool. Store in airtight container. Oh and last but not least, let us not forget this scrumptious pancake recipe .

Healthy Holiday Recipes - Tried and True!

Here are some of my favorite holiday recipes that are not only very yummy, but healthier too. I will be adding more very soon. Cut-Out Sugar Cookies - without the sugar by The Nourishing Apron I would actually call them honey cut out cookies if it were me.  I added in lemon flavoring.  I think a cream cheese, honey and lemon icing would be very yummy!  I also rolled mine a bit thicker and had to bake for 18 minutes. Ingredients: 1 1/2 cups flour 3/4 cup cold butter 1 teaspoon almond extract 1/4 cup honey. Directions: 1. Pulse butter and flour in food processor till mixture resembles course crumbs. 2. Drizzle honey and extract through the top hole of the processor while pulsing till mixture begins to hold together. 3. Gather dough into a ball and wrap in plastic.  Refrigerate at least 2 hours.  Roll into 1/8 inch thick and cut into desired shapes.  Bake on ungreased cookie sheet at 300 degrees for 8-10 minutes. 4. Make Ahead Recipes

Does that make sense? The thought I'm trying to convey here is making up food ahead of time for those times when you need something quick to grab. When I got my car, I was running a lot more than usual and eating out a lot more. So not worth my budget or my health. Here are a couple things I have made in the past few days to get ahead of the game. Both are SO yummy! (picture borrowed) Baked Oatmeal - I got this recipe from my friend Jennifer. You bake it, eat a single portion and refrigerate the rest. I like it leftover cold or warm. It's especially good warm with vanilla yogurt on the top. Oh and this oatmeal is not your usual baked oatmeal. It's more like a very moist cake. Very flavorful unlike most of them. This can be eaten by itself and enjoyed immensely. Ingredients: 6 cups oats 4 t baking powder 1-2 t cinnamon 1 teaspoon salt 2 cups buttermilk, rice milk, soy milk, etc.. 4 eggs 3/4 cup oil 1 cup honey 1 t. vanilla 3 cups fresh fruit or fr...

Making Yogurt Cheese and Collecting Whey

I've seen people doing this on and off and always thought it'd be neat but never took the time. Well, I decided to take the time last night/this morning. The directions are simple! Step 1: Get some yogurt. Of course raw milk whole yogurt would be best. I didn't have the luxury so I went to the store and bought some plain Stoneyfield yogurt. I've read you can use really any plain yogurt that has living cultures in it as long as it's plain and doesn't have gelatin in it. The gelatin would keep it from separating. Step 2: Get a bowl, a colander that will fit on the top of the bowl, some cheese cloth, a rubber band and something to tie it all up with. Of course you'll also need your yogurt and a spatula or spoon. Step 3: Put enough cheese cloth over the colander (double layered) so that it hangs a bit off the sides as you'll need to gather this up in a bit. Step 4: Pour your yogurt into the cheese cloth. Homemade Noodles and Alfredo

Matt wanted to make me a special meal the other day. Whenever he does this I get very excited! He makes AMAZING food! He chose to make homemade noodles, homemade alfredo sauce and chicken to place on the top. Yum! Below are the recipes. I must say this was better than any fancy italian restaurant I have ever eaten at. The more and more we cook new foods, the less we want to go out to eat - it just ends up being disappointing when we do. Both recipes below were snagged from recipezaar.com Homemade Egg Noodles 2 cups flour 3 egg yolks 1 egg 2 teaspoons salt 1/4-1/2 cup water Measure flour into bowl; make a well in the center and add egg yolks, whole egg and salt. Granola Bars, Baked Oatmeal and Whole Wheat Bread - Mmmm!

I got this recipe from a dear friend, Jennifer Dagett (sp?). I was wanting a different recipe to try. I have a very yummy healthy granola bar recipe which I'll post here in a minute as well. HOwever, the same thing all the time was getting boring. She gave me this recipe and we LOVE it! We eat it cold after it's been baked and refrigerated, or warm with some vanilla yogurt on the top. Very yummy! I've only used frozen blueberries for the fruit thus far but hope to use other fruits in the future. Baked Oatmeal Ingredients: 6 cups oats 4 t baking powder 1-2 t cinnamon 1 teaspoon salt 2 cups buttermilk, rice milk, soy milk, etc.. 4 eggs 3/4 cup oil 1 cup honey 1 t. vanilla 3 cups fresh fruit or frozen 1 cup nuts 1. mix all and spread into 9x13. 2. Meal Plan Monday

Here's a picture of Jon with homemade yogurt and frozen blueberries for a snack. He LOVED it! I thought this would be neat to start after seeing it on another blog. I'm still not great about lunch planning so I'll skip that for now. We usually do either leftovers, some kind of sandwich or soup and bread. Monday: Breakfast: Oatmeal and homemade yogurt. Dinner: Roast with carrots, onions and potatoes Tuesday Breakfast: Breakfast scramble and toast Dinner: Macaroni helper with veggies Wednesday Breakfast: Oatmeal and homemade yogurt. Dinner: Beef and noodles (with leftover roast) and mashed potatoes Thursday Breakfast: Eggs and toast Dinner: Chicken, stuffing, veggies Friday Breakfast: Oatmeal and homemade yogurt. Provencal Dagwood Sandwich - Yum!

I found this recipe in my husband's cookbook called The Barbeque Bible. Absolutely amazing! Crazy thing is, he really liked it too. Enjoy! Ingredients Veggies: sliced eggplant sliced zucchini sliced red peppers (I used green) sliced red onion - peeled but root end left attached Basting Mixture: 3 Tablespoons Olive Oil 2 Tablespoons fresh lemon juice 2 CLoves minced garlic 1 sprig fresh rosemary or 1 teaspoon dried salt and pepper For Serving: 1 long baguette (I used asiago cheese rolls) 8 oz goat cheese at room temperature DIrections: 1. Prepare veggies by slicing into long 1/4 inch slices. 2. Make basting mixture by combining all basting ingredients. 3. Set up the grill for grilling preheating on high. 4. When ready to cook brush veggies with the basting mixture. 5. Arrange veggies on grate and grill basting them once or twice more throughout cooking time. It should only take 3-6 minutes. Grandma Good's Pizza Dough - Fast and Easy!

The picture of that lovely lady above is my dear Grandma Good. Just recently I decided I'd go ahead and make it. Guess what, it's not only the best, it's the easiest pizza dough to make. No long rising time or anything. Here it is. Thanks so much Grandma Good! I only wish you lived closer so I could share some pizza with you. Pizza Crust Indredients: 1 cup plus 1/3 well rounded cup flour 1 teaspoon sugar 2 teaspoons instant yeast 1/2 teaspoon salt 3/4 cup warm water Directions: 1. Mix all dry ingredients in a bowl and add warm water. 2. Mix all above well with a fork. 3. Cover and let rest 5-10 minutes. 4. Turn out onto greased pan or ungreased pizza stone and roll out to the edges of the pan. 5. Top with favorite toppings and bake at 425 - 450 degrees till done. When the top looks done, the rest should be:)

Raisin Bran Muffins

I think these are very yummy. They are not to sweet and substantial enough. I like to add a smidge of cinnamon to mine as well. Sorry for the generic muffin pix. I hope to get one of my own up soon. Ingredients: 4 cups raisin bran cereal 2 cups milk 2 eggs 1/2 cup oil 2 cups of flour 2 teaspons of baking powder 1/2 cup of Sugar 1 teaspoon of salt Directions: Put cereal in a bowl with milk, beaten eggs and oil. Stir all together and let sit 10 minutes. Add in rest of ingredients and stir well. Fill your muffin container 2/3 or more full. Bake at 400 degrees for 20 minutes. I've also found the below recipe but have not had time to make it yet. I'm anxious to see how it turns out. Ingredients 1 1/4 cups flour, all-purpose 1 tablespoon baking powder 1/4 teaspoon salt 2 1/2 cups raisin bran cereal 1 cup milk 1/3 cup honey 1 each egg 3 tablespoons vegetable oil Directions Stir together flour, baking powder and salt.
