Simplifying Breakfast

Our life has taken a few turns along the way since my husband and I have gotten married.  We are constantly trying to cut out stressors and simplify what we can.  Today I'll be sharing a few recipes to simplify breakfast.  You can find many recipes similar to this that have bread in them.   However, I've been trying to go gluten free and these fit the bill better.   I have not made any of these yet but do plan on making 1-2 of these per week and then rotate them.  In our family, we eat high protein in the morning instead of lots of grains/fruits because our body works much better this way.

I found this picture online :)  Looks like a breakfast casserole with a hashbrown base.

Breakfast Casserole - this recipes uses hashbrowns as the base with eggs, cheddar cheese, veggies and breakfast meat.

Asparagus Breakfast Cassreole - this recipes uses hashbrowns as the base with eggs, asparagus, meat and swiss cheese.

By using the above ideas, I think I'll go ahead and try these variations as well.  I'm thinking if I saute the onion, pepper and other veggies ahead of time, it will taste better too.

Bacon Cheeseburger Breakfast Casserole - using hashbrowns as the base with eggs, cheddar cheese, hamburger that has been fried with onion (and drained), and crumbled bacon.  I'm also thinking sliced tomatoes on the top would be yummy!

Southwestern Breakfast Casserole - using hashbrowns as the base with eggs, sausage, diced chilies, diced onion, diced tomatoes, and colby jack cheese.

Mexican Breakfast Casserole - using hashbrowns as the base with eggs, leftover taco meat, garlic, onions and cheese.

If you have any other yummy ideas, please feel free to send them along.  Here's to a simplified morning!

Awesome! I've been trying to find/think of things I could freeze for David to take to work and eat for breakfast. Some of these would work well!

My Adult Tonsillectomy Story

Post Surgery as soon as I arrived home. For anyone who really knows me, I have always been completely terrified of surgery.  So when I went to an ENT and he said I needed a tonsillectomy I was not very happy.  I found out in either January or February and I couldn't make my appointment till the end of June because that's when my husband could get off work to help out.  I wrote this so I could hopefully help someone going through the same thing.  Without further ado, here goes. Week Before Surgery: This is when I started purchasing everything I had seen online that might be helpful.  I also started setting up an area on the main floor where I could be inclined for sleeping and have everything at my finger tips.  At the bottom of this post I will have a list of items that I personally found helpful for my recovery.  I also have food allergies and tried to stay away from them as much as possible.  So my food options may seem different than ma...

2020 From A Chronic Illness Warrior

Friends, the year 2020 has definitely looked different that’s for sure.  It’s been interesting talking to my other friends with chronic illnesses and getting their perspective.  For me this is what has changed.   Positives: There have been more online freebies as far as events than I have ever seen. This has been great for the person with chronic illness and we all hope some of these things continue.  Things such as online church, zoo, ballets, concerts, etc.   No more trying to fake feeling good when I had to go out because I’m not getting out.   So many more places are doing online pick up instead of just Walmart and Kroger. I needed those services before coronavirus hit the United States. Now having so many more options; it’s been a wonderful!! People finally don’t guilt trip me into going to events and family functions because they know I’m high risk. Before I felt like I had to explain away everything if I didn’t feel good enough to go somewhere. ...

Christmas Gift Planning Year Round

Picture borrowed from http://moneysavingmom.com/2011/09/get-a-jump-start-on-holiday-shopping.html/christmas-presents I love to plan my Christmas gifts starting in January.  This helps me not only save money but save sanity.  I save money because I have all year to look for those specific items and it saves my sanity because my family is not stressed about what to get someone.  We're prepared. Here's a few steps that have helped me. 1. First decide if you want to make all/some of your gifts.  If you want to make them, try to find neat and unique ideas online.  I LOVE pinterest.com for getting great ideas. 2. Is there someone in your family that has a lot of stuff?  For those people I get the same thing every year.  For our grandparents we do pictures in some form and homemade goodies.  For my mom and dad, I always get them a gift certificate to a Bed and Breakfast and add in something small for each one. 3. Make a list of everyone...
