French Onion Soup

A friend made mention not long ago that onion soup is great for colds. I knew eating onions and garlic was good for them but never put two and two together. I LOVE French Onion soup but had never found that one recipe....TILL NOW.

Here is my yummy adapted French Onion Soup recipe. The recipes I saw online mostly had sugar or wine in them. Since I don't want to use sugar and I don't have wine in the house, here's what I came up with. I think it turned out very nice.

Ingredients:
4 cups thinly sliced vidalia onions
1/4 cup butter
4 cups beef broth
pepper to taste
french bread
swiss cheese

Directions:
1. Melt butter in pan and add onions. Cook slowly over a medium/low heat for 20-30 minutes till almost carmalized.
2. Add in pepper and beef broth and bring to a boil.
3. Reduce heat to simmer and simmer for 20 minutes.
4. If desired, slice french bread and put on baking pan. Top with shredded cheese and broil till cheese is a bit bubbly. Add on the top of soup when serving.

Hey, move a little closer and I'll cook for you every day :) The cupcakes sound yummy! Yeah, you can never get the same taste from something that is made with whole wheat vs white flour but it doesn't mean they aren't good. I'm glad you liked them!

My Adult Tonsillectomy Story

Post Surgery as soon as I arrived home. For anyone who really knows me, I have always been completely terrified of surgery.  So when I went to an ENT and he said I needed a tonsillectomy I was not very happy.  I found out in either January or February and I couldn't make my appointment till the end of June because that's when my husband could get off work to help out.  I wrote this so I could hopefully help someone going through the same thing.  Without further ado, here goes. Week Before Surgery: This is when I started purchasing everything I had seen online that might be helpful.  I also started setting up an area on the main floor where I could be inclined for sleeping and have everything at my finger tips.  At the bottom of this post I will have a list of items that I personally found helpful for my recovery.  I also have food allergies and tried to stay away from them as much as possible.  So my food options may seem different than many online. Summer Herbal Tea

I made this up a couple years ago and it has def. been a summer favorite for me as well as for my kids.  If you can't drink black tea because of the caffeine (or other reasons), give this a try. Ingredients: 3 parts red raspberry leaf tea (not raspberry flavored) 1 part peppermint tea water Directions: 1. Steep tea as your normally would.  For me I use enough boiled water for a 2 quart pitcher.  I usually add in 6 Red Raspberry tea bags and 2 Peppermint Tea Bags.  If I have bulk, each tea bag itself usually contains about 1 teaspoon of loose tea.  I steep for 10 - 15 minutes, then take the tea bags out. 2. Add sweetener to taste - honey, stevia, etc... 3. Chill. It's that simple. What you're left with is a refreshing glass of tea for those hot summer days.  Below are some benefits of each of these teas.  Use caution when drinking peppermint tea while pregnant.  Spearmint is generally a better option.
