I have made milk kefir in the past but always ended up killing my grains.  The raw milk was too pricey to have on hand to make kefir all the time.  Then I found out about water kefir through some lovely ladies online.  One of them sent me some water kefir grains for me to get started.  Here's what happened.

I tweaked things a bit (are you surprised) and made these muffins.  Next time I'd definitely add in probably a tablespoon of lemon zest.  These are not super sweet muffins.  They are nice and hearty as well as tasty.  I think I will also do cranberry, orange peel and nut muffins next time.

Ingredients:
2 cups oat flour (I make my own)
2 teaspoons baking powder
1/4 - 1/2 teaspoon salt

Today is my 32nd birthday.  I'm blown away by the wonderful family and friends God has given me.  I'm so thankful for you all!  While lying in bed getting ready to get up this morning, I thought of making a bucket list.  I'm sure I'll update this as I think of more things but here goes!

This is my first year hot water bath canning.  To my surprise and delight, it all turned out great!  The salsa tastes amazing and the seals all sealed!  Enjoy!

5 lbs chopped and seeded tomatoes - I used mostly roma

This is my first year making freezer salsa.  I hope to eventually make some canned salsa since I saw online frozen will only last about 3 months.  Anyway, this is a combination of a couple recipes I found online.  The kids and I love it!  It's just spicy enough to say "oh, that's a bit spicy", but not too much.  I hope you enjoy it as much as I do.  I also hope we enjoy it after it's frozen.

Where to begin.  When I first opened up the pages to The Harvest of Grace, my initial reaction was that I didn't like how the author wrote the book.  Any other Amish book I've read captures the difference in speech the Amish use.  This book only uses a touch of this.  That however is the only turn off for me.

After having testing done...testing that was inaccurate due to not enough saliva, we had to do more testing. This testing was a 24 hour urine collection and a blood test.  I was able to stay on everything I've been taking and we measured it that way.  The results.

When I first received this book, I thought that this book talked about our walk with the Lord.  Instead, I found out that the title is very literal in what this book talks about. The whole point of this book was to teach us to talk a literal walk and pray while doing so.

I threw this together tonight and we liked it so well I thought I'd copy the recipe down.  This works great if you have some leftover steamed broccoli and leftover chicken.  The quality of the chicken broth makes all the difference.  If your chicken broth does not contain sodium, you will want to add some.

This book has been a big eye opener for me in a few areas.  Not so much for girls (because I am one) but more so for boys.

I've been on the search for years for an easy yet fabulous fajita seasoning.  I have not found a recipe that I like but I did find Lysander's Fajita Seasoning at Meijer tonight.  It has no msg and is gluten free!  These were by far the best fajitas we've had in a long time.  Here's how I made them.

Amanda - I got results from my ultrasound back this morning.  They were not sure about the nodule on my thyroid so they are going to have a biopsy of my thyroid scheduled soon.  It's then that we figure out what "it" is.

This morning we awoke, got breakfast and left by about 8:30 which put our arrival at the park entrance at about 9:00am.  It still took another 15-20 minutes to park, ride the ferryboat over to the park and get inside.  There were many more people than I thought there would be for early January.  That said, it was not horrendously crowded. For that I was really thankful.

Today I awoke around 7:00am.  Not intentionally mind you, but when I'm in a new place I can never sleep as long as I'd like or need to.  Joshie came over to cuddle and before you knew it, Jon was up and cuddling as well.
